HACCP, food hygiene and storage offences

An inspection may focus on hazards the business should control, temperatures, internal tracking or implementation of hygiene procedures. Address each recorded observation individually.

What to check in your case

Match the product and batch to the records available at inspection. Check the inspector’s measurement against the equipment used and storage conditions. Corrective-action records should show when each action was taken and which defect it addressed.

Documents for your defence
